Dinner Is Served
True confession: I used to not enjoy dinner preparation. Normally, the late afternoon came with fatigue and a lack of inspiration. Cooking simply had become a chore for me over the years. But, ever since I started clean eating in January, I have found a renewed love for the dinner hour. Focusing on protein and veggies means easy prep and satisfying foods that are both delicious and nutritious.
To make this colorful meal I first made a zesty cream sauce by melting several Laughing Cow pepper cheese individual servings and whisking in milk. Next, I sautéed broccoli in olive oil until crispy. Then I sautéed peppers, onions and asparagus. Setting all veggies aside, I cooked sliced turkey sausage in the same pan with a little more olive oil.
The tossed salad includes chopped Romaine lettuce, cucumbers, tomatoes, sliced egg, feta cheese and the cooked broccoli. Balsamic vinegar and olive oil make a quick and tasty dressing.
